Gelato vs Ice Cream

They look the same in the case. They taste noticeably different in the cup. Here is what actually separates gelato from ice cream — and why it matters for the perfect affogato.

Texture

Gelato is silkier and more elastic than ice cream. Ice cream is churned fast with a lot of air, which makes it fluffy and light on the tongue. Gelato is churned slowly with much less air, which makes it dense, smooth and almost creamy-taffy in feel.

Density

Ice cream is roughly 50% air by volume. Gelato is closer to 25%. That’s why a small scoop of gelato feels more satisfying than a much bigger scoop of ice cream.

It’s also why gelato holds its shape under a hot pour of espresso instead of instantly melting into liquid.

Temperature

Gelato is served warmer than ice cream — around 10 to 15°F warmer. Ice cream is served rock-hard-cold, which numbs your tongue. Gelato’s warmer serving temperature lets your palate actually taste it.

Flavor intensity

Ice cream is built on cream. Gelato is built on milk. Less fat coating the tongue means flavor comes through faster and cleaner.

That’s why a pistachio gelato tastes distinctly of pistachio, and a chocolate gelato tastes like cocoa rather than sweetened dairy.

Why gelato works beautifully in affogato

For an affogato, you want the gelato to stay recognizably gelato when the espresso hits it — not collapse into a coffee shake.

Gelato’s density holds up. Its warmer serving temp lets the espresso melt only the surface. Its cleaner flavor doesn’t fight the coffee. Together, you get two clear layers — hot coffee, cold cream — that come together spoonful by spoonful.
